Since you haven't backed it up, so there is very little chance for you to get documents back.

In this case, the notes has been partly overwritten. You can try to recover from iTunes backup if you've backed up your iPad with iTunes before.

I tried to recover a note that just disappeared off my ipad that day. It recovered all of some notes but only parts of others. Of course the one I was trying to recover was one of the ones that was not complete...any advice? Really need that note for a project I am working on..
